2 large eggs
1/2 cup broccoli florets
Salt and pepper to taste
¼ cup reduced-fat Cheddar cheese, shredded
Spray a small frying pan with cooking spray.
In a small bowl, beat eggs and set aside.
Add broccoli to the warm pan and cook until broccoli starts to get soft, stirring occasionally.
Pour the eggs over the broccoli. Top with cheese and salt and pepper.
Fold omelette when edges begin to set. Continue to cook until eggs are done, about 5 minutes.
